My Favorite Bean Salad

Hi everybody !

You might have noticed that I haven't blogged or even blog-hopped for a while. I have been SO busy with other things !

I have decided to change the way I blog for a while, to give me some room for some other projects that are taking a lot of my time right now and are somewhat urgent. I will not show you all that I eat ;-) but will choose a recipe that I love and give it to you (with a picture, of course !).

So this is a Black Bean Salad and my fave bean salad ever. It's like eating colors ! LOL
It is so fresh and lemony and wonderful ! I don't make it enough !

Gaia's Black Bean Salad

· 2 cups cooked black beans, rinced and drained
· 1 cup cooked corn, or more, to taste
· 1/2 of a green bell pepper, finely diced
· 1/2 of a red bell pepper, finely diced
· 4 to 6 green onions, finely chopped (or finely diced red onion)
· 1/3 cup (or more) of green stuffed olives, sliced
· black olives, sliced (optional)
· fresh parsley, chopped
· salt & pepper
· lemon juice, to taste
· the tiniest bit of olive oil


Mix all the ingredients together and let the flavors meld, in the fridge, before serving.

I love bean salad too. My mom's recipe is full of mayo and eggs so I don't eat it anymore so I'm definitely going to have to try yours.

By the way, I tried your Vege Pate. It was fabulous. I fact, it smelled so good when it came out of the oven that I didn't wait for my mom to get home with the french bread. I spread it on potato chips and ate it! So good, Thanks for sharing.

That looks simply marvelous. I can see why it would be your favorite- I love salads like this too! (Note to self: use olives next time)
